Diabetic: Breakfast Grits with Oranges and Pecans

Grits

Breakfast is the most important meal of the day and southerners must have grits to start the day.

Ingredients:

  • 1 1/2 cups non-fat milk or low-fat soy, almond
  • 1/2 cup instant grits
  • 1 tsp honey
  • Finely grated zest of 1 lemon
  • 1/8 tsp ground ginger
  • 4 oz can no-sugar-added drained mandarin oranges
  • 1/4 cup chopped pecans, toasted

Instructions:

  1. Bring the milk to a simmer in a medium saucepan over medium heat
  2. Gradually whisk the grits into the liquid, reduce the heat to low, and simmer until thickened
  3. Stir in honey, lemon zest, and ginger
  4. Divide the grits among 4 warm bowls, top each with some orange segments and pecans and serve.
