Grits
Breakfast is the most important meal of the day and southerners must have grits to start the day.
Ingredients:
- 1 1/2 cups non-fat milk or low-fat soy, almond
- 1/2 cup instant grits
- 1 tsp honey
- Finely grated zest of 1 lemon
- 1/8 tsp ground ginger
- 4 oz can no-sugar-added drained mandarin oranges
- 1/4 cup chopped pecans, toasted
Instructions:
- Bring the milk to a simmer in a medium saucepan over medium heat
- Gradually whisk the grits into the liquid, reduce the heat to low, and simmer until thickened
- Stir in honey, lemon zest, and ginger
- Divide the grits among 4 warm bowls, top each with some orange segments and pecans and serve.
