Chocolate Protein Balls

Ingredients

  • 3 cups of Black Beans
  • Almond Butter
  • Honey
  • Monk Fruit Sweetener
  • Vanilla Extract
  • Cinnamon
  • Kosher Salt

Procedure

Process 3 c cooked black beans, ¼ c almond butter, 3 Tbsp honey, 3 Tbsp monk fruit sweetener, 2 tsp vanilla extract, ½ tsp cinnamon, and ½ tsp kosher salt in a blender or food processor until smooth. Cover and chill in refrigerator 30 minutes. Roll in 24 balls; roll balls into ½ c finely chopped walnuts. Store in refrigerator or until ready to serve. Makes 24 balls (8 servings; 3 balls
per serving).
