Cinnamon Oat-Nut Crunch


  • Oats (Quick Cooking)
  • Chopped Walnuts
  • Oive Oil
  • Monk Fruit Sweetener
  • Cinnamon
  • Kosher Salt


Combine 1 c quick-cooking oats, 1 c chopped walnuts, 3 Tbsp olive oil, 1 Tbsp monk fruit sweetener, 1 tsp cinnamon, and ½ tsp kosher salt; spread in a single layer on a large baking sheet lined with parchment paper. Bake at 350°F for 8 to 12 minutes or until toasted, stirring halfway through baking. Makes 2 c (8 servings; ½ c per serving).
